Who doesn’t love a chicken nugget?  Obviously, you do or you wouldn’t be here.  Well, my 2-year-old daughter LOVES them.  She would put them through her face if she could.  I’m always experimenting with ways to make fan favorites at home and of course healthier. So I was giddy when she loved these sweet potato chicken nuggets and it’s nice to know that she’s not eating mystery nuggets and getting a little hidden veggie in there too;)

Sweet Potato Chicken Nuggets

Ground chicken, grated sweet potato, green onion, coconut flour, garlic powder, onion powder, salt

Preheat oven to 400° and line baking sheet with parchment paper or silicone baking mat.

Place all ingredients in a bowl and combine thoroughly.

Use a tablespoon or cookie dough scooper to spoon the mixture into your hands and roll into little balls.  Flatten slightly then place in rows on your baking sheet.

Bake for 30 minutes flipping halfway through or until crispy brown and done throughout.

Ok to broil for a couple of minutes on low to get a nice crust:)

Sweet Potato Chicken Nuggets

Simple, sweet and savory chicken nuggets that are full of flavor and easy to whip up in a pinch, that even your kids will love.

Ingredients

  • 1 lb ground chicken uncooked
  • 2 cups grated sweet potato I used a cheese grater
  • 2 tbsp coconut flour
  • 3 sprigs chopped green onion
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp sea salt
  • coconut oil enough to grease the pan, or use silicone baking mats

Instructions

  • Preheat oven to 400° and line baking sheet with parchment paper or a baking mat. 
  • Combine all of the ingredients in a mixing bowl 
  • Use a tablespoon or a cookie dough scooper (my personal preference) to scoop the mixture and roll into little balls, slightly flattened between your fingers. 
    Line up on the baking sheet in rows.
  • Bake for 30 minutes flipping halfway through. 
    They are done when they have a crispy crust and are cooked throughout. 
  • Allow to cool and serve with your favorite dipping sauce!
