There is a reason that a lot of people don’t like Brussel sprouts. They can be bitter, but I am coming to the conclusion that you can pretty much roast anything and it will be delicious. Brussel sprouts are no exception. Add a delicious marinade like Balsamic vinaigrette and it takes them to an entirely new level. (more…)

I LOVE pretty much anything that can be fried in a pan (who doesn’t, right?) Pancakes, fritters, crab cakes, you name it, so these salmon cakes, or croquettes, have a special place in my heart and make a regular appearance in my meal prep for the week.
