There is a reason that a lot of people don’t like Brussel sprouts. They can be bitter, but I am coming to the conclusion that you can pretty much roast anything and it will be delicious. I LOVE pretty much anything that can be fried in a pan (who doesn’t, right?) Pancakes, fritters, crab cakes, you name it, so these salmon cakes, or croquettes, have a special place in my heart and make a regular appearance in my meal prep for the week. Soup was never something I made very often because it always felt labor intensive felt like it took forever. Same for chilis, stews etc. That has definitely changed since I got an Instant Pot. I will not go into all of the reasons why the Instant Pot is awesome in this post but trust me, if you don’t have one it is definitely worth the investment. It is dang near impossible trying to find a condiment in the grocery store that isn’t filled with refined polyunsaturated oils and if you do find one it costs an arm and a leg. Who doesn’t love a chicken nugget? Obviously, you do or you wouldn’t be here. Well, my 2-year-old daughter LOVES them. She would put them through her face if she could. I’m always experimenting with ways to make fan favorites at home and of course healthier. So I was giddy when she loved these sweet potato chicken nuggets and it’s nice to know that she’s not eating mystery nuggets and getting a little hidden veggie in there too;) (more…)

I am a huge fan of almost anything fermented or pickled. The acid from pickled foods just brings to life almost any dish. I recently had a breakfast dish at a local restaurant that featured pickled collard greens with poached eggs and it was a revelation. I just knew I had to try and make some for myself at home after trying them. (more…)
